HOW IT ALL BEGAN
In Irish mythology, legends tell of a mystical place that lies beyond the Coast of Ireland, far out across the sea. Said to be the home of
the Irish Sea God ‘Mac Lir’, these mystical islands, known as the ‘Otherworld’ are invisible to the naked human eye.
It is a place where sickness and death do not exist, a place of eternal youth and beauty. Here, music, strength, life and all pleasurable
pursuits come together in a single place.
Ninth Wave Gin is inspired by our love of Irish mythology, its links to the sea and the role it has played throughout the history of our country.
The bottle, in ocean blue glass, incorporates the symbolism of the Celtic Triskellion (triple spiral) which adorns many ancient monuments throughout the island. We thought a beautiful gin deserved a beautiful bottle!
London Dry Gin style. A proportion of the botanicals blend are macerated overnight within the base spirit for each individual batch. On the following day secondary distillation begins with gradual heating of the liquid within the Gin Pot Still to the required temperature.
Each batch is distilled slowly over an 8-hour period with the additional inclusion of some of the botanicals into the infusion/vapour basket. The final gin is distilled to a strength of between74–75% abv & finally reduced to 43% abv prior to bottling.
