In recognition of the 161 years between the building of the original Estate house in 1859 and the opening of the Hinch Distillery in 2020 we are proud to make available 161 casks of the very first single malt spirit to run from our stills.
The Killaney Estate, Home of Hinch Distillery, sits in beautiful County Down countryside just North of Ballynahinch and South of the City of Belfast. The original house was built on the Estate in 1859 by the Marquis of Downshire. 161 years later, under the stewardship of owner Dr Terry Cross O.B.E., the Hinch Distillery was built on the land, sensitively set back into the rolling hills and constructed from complementary local materials that will stand the test of time. The vision for our whiskey has been shaped by County Down’s historical & cultural heritage and the experiences of our Head Distiller Aaron Flaherty whilst distilling in Ireland and Scotland.
Our grain to glass distillery has been custom built to produce a very particular Irish Single Malt Whiskey. Hinch has all the traditional smoothness of classic Irish triple distillation whilst being distinctly full bodied and bold, expressing rich new aromas, flavour and mouth feel.
For our An Chéad Dún Cask Release we have selected 200 litre First Fill Ex-Bourbon American Oak casks from the famous Maker’s Mark Distillery, Kentucky, USA. Maker’s Mark was founded by the Samuels family whose forefather John Samuels Senior was one the first Irish Scots immigrants to set sail from the north of Ireland for America in 1713.
The first recorded distillation of a rye mash in America was by members of this group. In 2010 Rob (Robert) Samuels became Chief Operating Officer, the 10th successive generation of the family to be involved in the Maker’s Mark distillery.
This heritage made Maker’s Mark the natural choice for our whiskey, inspired by the complementary whiskey making skills and traditions of our shared Irish Forefathers.
As with buying wine en primeur, no-one can know for sure what the future holds for the flavour profile of our whiskey as it develops; it is part of the magic of that journey.
We know that the wider shoulders of our stills and the short, upwardly angled lyne arms are allowing a greater amount of the condensed spirit vapour to return to the still, which we run at a slower, gentler boil.
We know that we are achieving consistently bigger, bolder flavours that are mellow and rounded in mouth-feel.
We know that the new make spirit is as good as we had hoped, balancing an early honeyed profile with under-lying power and some intriguing spiciness.
We are confident the quality of the casks will add wonderful new layers of flavour and complexity to the whiskey that will only be revealed in the years to come.
